JD’s Country Pancakes

Here is my favorite pancake, it only took me about 3 years to get it right. Makes about 12  8″ thick/ light pancakes.

2 Cups All Purpose Flour

2 Large Eggs

1 Tsp Salt

1 Tbs Sugar

1 Tbs of Baking Powder

2 Tbs of  Cooking Oil

1/2 Tsp Cinnamon

1 Tsp Vanilla or Maple flavoring

2 Cups of Whole Milk

Mix dry and wet ingredients separately and then blend them together. Do not over work the mix a few small clumps will not hurt and helps to keep the pancakes light.

You can mix in Blue Berries or Black Berries to the batter in the amount that you like.
